Instructions on how to make radish Kimchi

 

Radish water kimchi is made from radishes marinated and soaked in brine along with cabbage in red chili powder kimchi.


The word nabak refers to the thin square shape of radish slices. With its cool and mild flavor, nabak kimchi is loved by both men and women of all ages.


1. Ingredients


- 200g cabbage, 200g radish

- 10g salt (2.5 teaspoons)

- 20g green onions

- 50g watercress

- 24g minced garlic

- 15g minced ginger

- 30g chili

- 3g pine nuts

- Kimchi juice: 1.2 liters of water, 18g salt (1.5 tablespoons), 4g sugar (1 teaspoon), 14g chili powder


2. How to do it


Prepare:

- Wash the cabbage and radish and cut into pieces 2.5 cm wide - 3 cm long and 0.3 cm thick; Marinate for 5 minutes, then add the radish. Marinate for another 5 minutes and then drain. Save the brine.

Wash the scallions and watercress and cut them into 3 cm lengths. Cut the peppers lengthwise, remove the seeds, and divide into pieces 3 cm long and 0.3 cm thick.

- Add water, salt and sugar to the retained brine. Put chili powder in a cotton cloth bag, dip in salt water 10 times to make kimchi water color.

Cut off the tops of the pine nuts and wipe them clean with a dry cotton towel.


Making:


- Mix the cabbage with the marinated radish, scallions and chili together. Put this mixture in a bowl and pour in the kimchi juice.

- When using, we can decorate with watercress and pine nuts on top.
